Peña’s creativity shows in the food at Bistro on the Square

The vegetable garden that flourishes outside Bistro on the Square in downtown Uvalde is one hint that Uvalde transplant Noel Peña’s fare might be a little different. The next hint is the menu, colorfully advertised on a chalkboard; last week, daily specials included a mango shrimp salad, cushaw squash and pork, and a chorizo burger topped with spinach and Swiss cheese, served with warm potato salad.
